National Adobo Fest

There was a big pile of traffic at Lopue's Mandalagan that made me late for the FIRST National Adobo Festival in Silay City where Balay Negrense Museum has been holding for the past nine years the Adobo Festival.

The La Carlota drumbeaters were already resting at the entrance of the Silay Civic Center . I was greeted by George Clooney look-alike Silay Mayor Oti Montelibano and smart Negros Cultural Foundation Chair Lyn Gamboa, flushed with the excitement of the affair. Four long buffet tables with floral printed linens in orange and green were lighted on top with long bamboo poles hung from the ceiling giving a magic glow to the place. Manila stylist Denis Tan was brought in by Organic Queen Mara Pardo de Tavera to spruce up this memorable event.

For the glorious food, there were four nipa huts that served as serving stations for the feast prepared by Pancho Bringas of Sugarland Hotel, JP Anglo of Mu Shu Restaurant and New York trained caterer Mia Gonzaga.

It was a real feast that started with hors d'ouevres of toasted mini piayas and tossed salad as we watched the famous Kabataang Silay Ensemble and Rondalla perform. I was seated with the festival's top culinary lecturers from Manila and you should have heard them gushing over the performers trained by Taffy Acot! Dinner proceeded with yummy linguine, to-die-for Thai-style deboned catfish, very innovative confit spareribs and different bite-sized kakanins of ube and bichu-bichu. Yes, dahlinks, you did miss a great culinary treat! But, hey, I didn't have any adobo?
