Restaurateur Margarita Fores yesterday lauded Negros Occidental for spearheading the move towards organic farming, and called on Negrenses to go natural to stay healthy.
Negros is the template for the rest of the provinces in the Philippine in organic farming that's why the province really needs to fight for it to continue, she said.
Fores served an Organic Lunch Buffet, in partnership with Chef Richard Ynayan and the Institute of Culinary Arts de la Salle Bacolod , at the Social Hall of the Provincial Capitol yesterday as part of the ongoing fourth Organic Farmers Festival.
Fores, who is a cancer survivor, said the less chemicals we ingest and the more we eat natural food, maybe the incidence of cancer will go down.
People should go organic to stay healthy, she said.
The reason why organic food is expensive is there are not enough people producing it because the market is not that big yet, she said.
If more and more people go organic, prices will go down and it will be a more sustainable for farmers, she said, adding that Negros is way ahead of the rest of the provinces in the country in organic farming.
The lunch, at the Provincial Social Hall, served Fores' specially designed menu, using certified organic raw materials from Negros Occidental.
Among the dishes served were Salad of Palm Heart and avocado with mixed greens and guava jelly vinaigrette, organic pate' raviolini with sage butter, roast Bacolod style lechon with duetto sauces of liver and mostarda di frutta, roast goat capretto rosmarino with English mint sauce, lemon and pepper roast chicken, and fried organic boneless bangus with mango wansuy salsa.
Suntown Camp Foundation for children with cancer and serious illnesses was the beneficiary of the luncheon.*CPG
